Description: Our Perry is richly textured and off-dry, with a zesty dose of fresh ginger to add spice. To produce our Perry, we employ many of the same fermentation principles and practices used for our standard hard cider. For the juice, we started with a freshly pressed Perry Pear and Anjou Pears, and fermented this to dryness. Pears, unlike apples and grapes, contain a higher percentage of un-fermentable sugars (mainly sorbitol), so the finished fermentation contains a higher level of sweetness from these residual sugars. To balance out the acidity, additional fresh-pressed pear juice was also blended back into the fermented Perry along with freshly juiced ginger to give it some zing.
